Impasto per Pizza (Pizza Dough)

Servings: 4-6

Ingredients for Dough:

800 grams soft wheat flour
200 grams semolina flour
30 grams salt
10 grams sugar
1 gram yeast
550 grams of warm water
salt and pepper, to taste
few tablespoons of extra virgin olive oil

Ingredients for Toppings: Experiment by making a red pizza or a white pizza with whatever you like for toppings. No doubt the result will be delicious!


Dissolve the yeast in the water.
Make a soft dough with the flours, salt, and yeast. Cover and leave it in a warm place to rise until it doubles in volume.
Place the dough on a floured work surface, and use your fingers to make into a round or rectangular shape.
Put the dough into a greased dish or pan, spreading with the fingers until it is about ½ inch thick. Top generously with your choice of cheeses, spices, other toppings, and a few drops of olive oil.
Season with salt and pepper, and bake in a hot oven for about 20 minutes.
Cut into the desired number of pieces, and serve hot.
